We’re Bradley and Kimberly Wolter, founders of Windy Hill Meadows, a family beef operation in southern Illinois. More than 20 years ago, a cattle girl and a future geneticist met at the University of Illinois and set out to rethink how premium beef should be raised.
With backgrounds in animal genetics, ag economics, foodservice, and husbandry, we built a closed-loop beef program that manages every step—from genetics and nutrition to animal care, traceability, and harvest. The goal is simple: consistent, high-quality beef from pasture to plate.
Today, our children, Lauren and Blake, are part of the mission, and our network of farm partners continues to grow. Together, we’re raising better beef from pasture to plate—and better lives for us and the incredible families who help raise it.
